芒果沙律

材料:

生芒果............................3

綠色辣椒仔........................3 (切粒)

香茅..............................1/2 (切片)

乾蔥頭.............................3 (切片)
炸香蝦米...........................1/4

乾魷魚..............................1

調味:

雞粉..............................1/2 茶匙

辣椒汁............................1/2 茶匙

................................1 湯匙

檸檬汁............................1 湯匙

製法:

1.      芒果去皮刨絲,辣椒仔切成小圈狀。

2.      乾蔥頭切片,一半炸脆備用。

3.      乾魷魚用剪刀剪成幼條,放在油中炸脆。

4.      將所有材料放置盤中,加入調味料拌勻,放在碟中,灑上炸脆乾片即成。


Mango Salad

Ingredients:

Unripe mangoes...................................3

Chilli green peppers................................3 (diced)

Lemon grass......................................1/2 stalk (cut into strips)

Shallot...........................................3 cloves (sliced)

Dried shrimp, deep-fried..............................1/4 cup

Dried squid........................................1

Seasoning:

Chicken powder...................................1/2 tsp

Hot pepper sauce..................................1/2 tsp

Sugar ..........................................1 tbsp

Lemon juice .....................................1 tbsp

Method:

1.      Peel mangoes and cut flesh into strips. Cut green chilli peppers into circles.

2.      Slice the shallots, deep-fry half of them and set aside.

3.      Cut dried squid into fine strips with scissors and deep-fry until crispy.

4.      Put all ingredients into a bowl. Add the seasonings and mix well. Sprinkle with the deep-fired shallot.
