乾炒河粉 Stir Fried Beef Noodles

 

食材
河粉500克、牛肉或豬肉200克、綠
豆芽200克、韭黃50克、蔥兩段、少
許薑汁

醃料:
老抽1湯匙、麻油1茶匙、胡椒粉少許

做法:
1. 洗淨肉,切成薄片,加醃料醃10分鐘,放入開水中灼至將熟,撈起瀝乾水
2. 摘去綠豆芽頭尾洗淨瀝水,洗淨韭黃,切成小段,蔥切絲
3. 翻開河粉,加入1/3茶匙鹽拌勻
4. 鍋裡下4湯匙的油燒熱,放入綠豆芽和薑絲略炒,加2湯匙水放入河粉炒勻後,加入肉片炒至半乾,加蔥和韭黃略炒即成

 

Ingredients
Flat Rice Noodle
500 grams, 200 grams of beef or pork,
Bean sprouts 200 grams, 50 grams of leek, two stalks of scallion, few slices of shredded ginger, a dash of Ginger juice

Marinade:
Dark soya sauce
, 1 tablespoon sesame oil, 1 teaspoon pepper

Instructions:
1. Wash meat, cut into thin slices, Marinate for 10 minutes, add boiling water blanch to be cooked, ready to drain water
2. Pluck off the top and root the bean sprouts, washed, drain. Cut leeks and scallion into short sections,
3. Add 1 / 3 teaspoon salt to flat noodles, and mix well
4. Use 4 tablespoons of oil for cooking, set flame highest setting, add bean sprouts and shredded ginger , add 2 tablespoons of water, and a dash of ginger juice into the rice noodles stir well, add meat,  when almost done, add scallion and leek for garnish.
